Herbed Chicken & Cranberry Club Sandwich
24 slices thick wholemeal OR white bread
10 tablespoons softened butter
1 chicken, cooked, cooled and chopped
1 cup Ocean Spray® Craisins® dried cranberries
1/2 cup mayonnaise
2 tablespoons chopped coriander
2 tablespoons chopped chives
4 spring onions, chopped
3/4 cup Ocean Spray® Whole Berry Cranberry Sauce
Butter bread. Mix together chicken, Craisins®, mayonnaise, herbs, spring onions, and salt and pepper to taste. Spread an even layer of chicken mixture onto half the slices of bread. Spread the remaining slices with the Cranberry Sauce. Top chicken with cranberry slices to make a sandwich. Press lightly.
Stack sandwiches in a clean tea towel and refrigerate until needed (3-4 hours maximum). Trim crusts from sandwiches. Cut into 3-4 finger lengths and serve.
