Smoky Cranberry Quesadilla
1 cup salsa
1/2 cup Ocean Spray® Craisins® Original Dried Cranberries
1 tablespoon oil
6 large flour tortillas
6 slices smoked deli turkey or ham
1-1/2 cups shredded cheddar and mozzarella cheese
Sour cream, optional
Stir salsa and dried cranberries together in a small bowl; set aside.
Lightly brush the bottom side of each tortilla with oil. Spread about 1/4 cup salsa mixture on HALF of each tortilla; place 1 slice of turkey on top of salsa, then sprinkle with about 1/4 cup cheese. Fold over top half.
Cook each side of tortilla in a large skillet over medium heat until golden brown, about 2 to 3 minutes per side. Repeat with remaining tortillas. Cut each tortilla into 3 wedges. Serve with sour cream and salsa, if desired. Serve immediately.
