Cranberry & Pistachio Muesli Bars (or Granola)

Ingredients
1 cup walnuts
1 cup almonds
1 cup oats (gluten free or regular)
1 cup Ocean Spray® Craisins® chopped
1/4 cup pistachios chopped
1/3 cup pure maple syrup
1/4 cup coconut oil
2 Tbsp chia seeds
2 Tbsp cashew butter
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/3 tsp salt
Steps
1. Pre-heat oven to 180 degrees Celsius.
2. Line a 20cm x 20cm baking tray with baking paper or silicone mat.
3. For the dry mix, place almonds, walnuts and oats in a food processor and pulse lightly untill mix is lightly chopped. Add chia seeds, cinnamon, chopped Craisins®, chopped pistachios, and mix to combine.
4. For the wet mix, in a small saucepan combine the coconut oil, maple syrup, salt, vanilla and nut butter. Simmer, stirring the mixture until blended. Remove from heat.
5. Combine the wet mixture to the dry mixture with a spatula, and blend to combine.
6. Place the mix in baking tray and press mix down firmly. Tip: Use a slightly smaller baking tray (if you have one) and a bit of baking paper to very firmly press the mix down into the baking tray (this will help keep the bars firmly shaped when sliced).
7. Bake in oven for 25 minutes. Allow to cool and place in the fridge to chill before slicing.
8. Bars last up to 1 week in the fridge. Makes 10 bars.
