Cranberry Carrot Cake

Ingredients
1 cup buckwheat flour
1 1/2 tsp baking powder
1 tsp ground spices e.g. cinnamon
3/4 cup shredded carrots
3 tbsp nut butter
1/4 cup sugar
1/4 cup Ocean Spray® Whole Berry Cranberry sauce
1/2 cup plant-based milk
To fold in:1/4 cup Ocean Spray Craisins® 50% Less Sugar Dried Cranberries
Frosting:
1/2 cup cream cheese
1/4 cup icing sugar
2 tbsp Ocean Spray® Whole Berry Cranberry sauce
Optional 1 tbsp cranberry juice Top with dried cranberries
Steps
1. Preheat oven to 175C.
2. In a bowl combine all ingredients together until smooth.
3. Pour into a lined baking tin and bake for 40 mins or until centre comes out clean when inserted with a toothpick. Let cool completely.
4. Combine frosting ingredients and smear on top of the carrot cake. Slice and enjoy.
