Chunky White Chocolate Chip & Cranberry Cookies

Ingredients
2 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, softened
1 cup light brown sugar
1/2 cup caster sugar
2 large eggs
2 tsp vanilla extract
220g white cooking chocolate, roughly chopped
1 cup Ocean Spray® Craisins® 50% Less Sugar Dried Cranberries
Steps
1. Preheat the oven to 180°C. Line baking trays with baking paper paper and set aside.
2. In a large mixing bowl, whisk together the flour, baking soda, and salt.
3. In a separate mixing bowl, mix the butter, brown sugar, and sugar together for 1-2 minutes or until well combined. Mix in the eggs, then mix in the vanilla extract.
4. Slowly add in the dry ingredients and continue mixing until just combined. Then mix in the white chocolate chunks and Ocean Spray® Craisins® until combined.
5. Using a 1.5 tablespoon cookie scoop, scoop the cookie dough and drop onto the prepared baking sheets. Make sure to leave room between each ball of cookie dough.
6. Bake for 10-12 minutes or until the cookies are lightly browned. Remove from the oven and cool for 5-10 minutes.
OPTION FOR GIFTING: To make the cookie mix in a 1 litre glass jar, layer the following ingredients as follows:
1st layer: Blended flour, baking soda and salt.
2nd layer: White chocolate chunks
3rd layer: Ocean Spray® Craisins® Close lid, tie with decorative ribbon, and attach tag with additional wet ingredients to add and baking instructions.
