Warm Rainbow Salad with Cranberries

INGREDIENTS

  • 2 Tbsp extra-virgin olive oil
  • 1/3 cup edamame
  • 1 cob of corn, kennelled (or 400g canned corn, drained)
  • 1/2 red capsium, chopped
  • 1/2 broccoli floret, chopped
  • 1/4 cup green beans, cut into 1cm lengths
  • Protein of choice, 1cm cubes (e.g. tofu, chicken)
  • 1/4 cup macadamia nuts
  • 3 Tbsp Ocean Spray® Craisins® Dried Cranberries
  • Sea salt and pepper, to taste

  • Optional:
  • Serve with crispbread, flat bread, or thinly sliced and toasted bread.

DIRECTIONS

1. Heat oil in pan on medium heat. Stir fry all vegies and protein until cooked through (do not over-cook).

2. Season with salt and pepper, to taste.

3. Just before serving, stir in macadamia nuts and Craisins®.

4. Optional: Serve with crispbread, flat bread, or thinly sliced and toasted bread.
