Cranberry White Chocolate and Coconut Protein Balls

INGREDIENTS

  • 1/2 Cup chopped Craisins® Original Dried Cranberries
  • 1 Cup quick oats
  • 1 Cup sunflower seed meal (sunflower seeds blitzed)
  • 1/4 Cup coconut milk
  • 1/2 Cup water
  • 100g vanilla whey protein powder (or vegan equivalent)
  • 150g chopped white choc (sugar free or vegan options)
  • 1/2 Cup shredded coconut
  • 2 tbsp stevia powder
  • 1/2 Cup shredded coconut for rolling

DIRECTIONS

1. Sunflower meal, protein powder, stevia, coconut, chocolate & cranberries. Add coconut cream & water.
2. Combine and roll into balls. Keep hands slightly wet to stop them from sticking
3. Roll in coconut and refrigerate to allow oats to soak
