1. Place all ingredients in a small saucepan and bring to a slow simmer for 5 minutes, allow to cool.
2. Remove the star anise and cinnamon, and blitz the syrup in a blender until smooth.
3. Place syrup in the refrigerator until you are ready to make the mocktails
4. Divide the spiced cranberry syrup between 2 glasses and top up with cold sparkling water.
