Peanut Butter, Chocolate & Craisins® Cookie

INGREDIENTS

  • Dry Ingredients:
  • ½ cup almond meal
  • ½ cup Ocean Spray® Craisins® Dried Cranberries
  • 1 1/4 cups rolled oats
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • Wet Ingredients:
  • ¼ cup peanut butter, melted in microwave
  • ¼ cup coconut sugar
  • 1 flax egg (1 tablespoon flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
  • 1 tsp pure vanilla extract
  • 1 Tbsp pure maple syrup
  • Decoration:
  • 1 cup milk or dark chocolate, melted

DIRECTIONS

1. Preheat oven to 180 celcius. Line a baking sheet with baking paper or mat.

2. In a bowl, mix together all of the dry ingredients.

3. In a separate bowl, whisk together the wet ingredients.

4. Pour the wet mixture over the dry mixture. Fold in Craisins®. Dough will be very sticky and wet.

5. Roll golf-ball sized amounts into balls, and place on baking sheet.

6. Bake for 12-16 minutes.

7. When cool, dip and drizzle with melted chocolate.
