Smoked Trout Craisins® Salsa
Sliced day old bread
2 tablespoons butter, melted
1 fillet smoked trout, flaked
1/4 cup egg mayonnaise
1/2 cup grated granny smith apples
1 small avocado, finely diced
2 Roma tomatoes, seeded, finely diced
1/2 cup finely chopped Ocean Spray® Craisins® dried cranberries
1 small red onion, finely chopped
2 tablespoons Ocean Spray® Jellied Cranberry Sauce
Preheat oven to 180°C.
Cut bread into 4 cm rounds, brush with butter and bake until golden. Lightly combine trout, mayonnaise, apple and celery. For the salsa combine avocado, tomato, Craisins®, onion and sauce. Place a teaspoonful of trout mixture on top of bread round and top with salsa.
