Aubergine crostini with Cranberry Pesto

INGREDIENTS

  • Pesto ingredients:
  • 275 grams Ocean Spray® Whole Berry Cranberry Sauce
  • 1 large garlic clove crushed
  • 1 small bunch basil, chopped finely
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Aubergine ingredients:
  • 3 Lebanese Aubergine, sliced thinly lengthwise
  • 1 large baguette, sliced thinly to make crostini
  • 1 large clove garlic, whole peeled
  • Olive oil to drizzle

DIRECTIONS

To make pesto: combine all pesto ingredients and set aside for flavours to infuse. Meanwhile prepare crostini by grilling the bread slices and rub each with raw garlic clove. Grill Aubergine until cooked through. To assemble, place aubergine slices on top of crostini and top with cranberry pesto. Garnish with a drizzle of olive oil and a fresh basil leaf.
