Poached Stone Fruits with Ambrosia Cream

ingredients:

  • 1 cup sugar
  • 400ml water
  • 400ml Ocean SprayŽ Cranberry Classic™
  • 3 cardamom pods
  • 1 cinnamon stick
  • 1 vanilla bean
  • 4 peaches and nectarines
  • Zest of one orange

Ambrosia Cream ingredients:

  • 1 cup cream
  • 1 cup vanilla yoghurt
  • 2 tbspn melted dark chocolate
  • Vanilla essence
 

Over a medium heat gently dissolve sugar in water. Add Ocean SprayŽ Cranberry Classic™, cardamom pods, cinnamon stick, vanilla bean and orange zest.

Add stone fruit (any seasonal stone fruit will do) and poach for 5-6 minutes. Check with a skewer to make sure fruit is soft and ready to serve.

Remove fruit and simmer liquid to reduce by half.

In a separate bowl mix the cream, vanilla yoghurt, melted chocolate and a couple of drops of vanilla essence.

Pour remaining liquid over poached fruit and serve warm with ambrosia cream.
