Preheat oven to 220c.
In a microwave safe bowl combine Craisins® and 1/2 cup of Cointreau. Microwave for 1 minute on high and let cool. Meanwhile, cut pastry sheets into 8 - 10cm stars and place on a non-stick lightly greased baking tray. Brush with melted butter and sprinkle each with sugar. Bake for 7-10 minutes or until stars are golden brown. Remove from tray and let cool. Continue until all stars are baked. Combine mascarpone with 2 tablespoons of Cointreau and dollop a heaped teaspoon on each star leaving a well in the centre. Place a tablespoon of soaked Craisins® on each star and sprinkle with mint leaves.
