Beef & Cranberry Roll
ingredients:
- 2 bread rolls
- 1 tablespoon horseradish cream
- 2 tablespoons Ocean Spray® Whole Berry Cranberry Sauce
- 1/3 cup caramelised onion slices
- 4 slices rare roast beef
- 1 tomato, sliced baby spinach leaves
- 3/4 cup Ocean Spray® Craisins® dried cranberries
- 4 puff pastry sheets, separated
- 2 teaspoons cumin seed
Slice open rolls and spread one side of each roll with horseradish cream and the other with Cranberry Sauce. To caramelise onions, on low heat, melt 2 tablespoons of butter, then add 1/2 an onion sliced thinly and 2 tablespoons of brown sugar. Cook over very low heat, stirring frequently, until onions are translucent and sugar has caramelised. Layer remaining ingredients onto rolls and serve.

Chef’s tip: Cranberry Sauce is also excellent spread on split croissants, then topped with thin slices of ham and tasty cheese.
