Aubergine Crostini with Cranberry Pesto
pesto ingredients:
- 275g Ocean Spray Whole Berry Cranberry Sauce
- 1 large garlic clove crushed
- 1 small bunch basil chopped finely
- 1 tablespoon olive oil
- Salt and pepper to taste
aubergine ingredients:
- 3 Lebanese Aubergine sliced thinly lengthwise
- 1 large banquette sliced thinly
- 1 large clove garlic whole
- Olive oil to drizzle
To make pesto combine all ingredients and set aside for flavors to infuse. Meanwhile prepare crostini by grilling the bread slices and rub each with raw garlic clove. Grill Aubergine until cooked through. To assemble, place aubergine slices on top of crostini and top with pesto. Garnish with a drizzle of olive oil and a fresh basil leaf.

Makes: 15-20 crostini

Cooking Time: 15 minutes
Chef’s Tip: Try any of your favourite veggies grilled. Add goat’s cheese for an extra creamy and rich flavour.
