Turkey Salad with Cranberry Feta Cheese Dressing
ingredients:
- 1 head of lettuce
- baby spinach leaves
- 12-16 slices cooked turkey, julienne strips or cubes
- 1/2 cup OCEAN SPRAY® Craisins® Sweetened Dried Cranberries
- 1/2 cup chopped pecans
- 1/2 cup OCEAN SPRAY® Whole Berry Cranberry Sauce
- 2 tablespoons red wine vinegar
- pinch of sugar
- 1/2 cup light olive oil
- 1/2 teaspoon Dijon mustard
- 1 cup crumbled feta cheese
- 1-2 tablespoons chives/parsley/basil/mint
Wash and refrigerate lettuce and spinach to crisp.
Tear into bite-size pieces. Mix lettuce, spinach, turkey, Craisins® and pecans in a large bowl. Set aside.
For dressing, put cranberry sauce, vinegar, sugar, oil and mustard in a jar and shake vigorously. Dress salad, sprinkle over with feta cheese and your choice of herbs.
