Prawn Salad with Chili Cranberry Dressing

dressing ingredients:

  • 275g Ocean Spray Jellied Cranberry Sauce
  • 1/2 cup sweet chilli sauce
  • 1 tablespoon ginger freshly grated
  • Juice of 1 lime
  • 2 tablespoons coriander chopped finely
  • Salt and pepper to taste

salad ingredients:

  • 1 Head bib lettuce
  • 200g Mixed lettuce leaves
  • 1 Small continental cucumber julienned
  • 12 prawns cooked and peeled
  • Sesame seeds to garnish
 

Combine all dressing ingredients and set aside for flavors to infuse. To assemble salad pick cups from the head of lettuce to create small “bowls”. Fill with lettuce leaves, cucumber and prawns. Drizzle with dressing and sprinkle with sesame seeds.
