Perfect to have with drinks or to serve as a starter.
Smoked Trout Craisin® Salsa
ingredients:
- sliced day old bread
- 2 tablespoons butter melted
- 1 fillet smoked trout, flaked
- 1/4 cup egg mayonnaise
- 1/2 cup grated granny smith apple
- 1 small avocado, finely diced
- 2 Roma tomatoes, seeded, finely diced
- 1/2 cup finely chopped Ocean Spray® Craisins® sweetened dried cranberries
- 1 small red onion, finely chopped
- 2 tablespoons Ocean Spray® Jellied Cranberry Sauce
Preheat oven to 180c.
Cut bread into 4cm rounds, brush with butter and bake until golden. Lightly combine trout, mayonnaise, apple and celery. For the salsa combine avocado, tomato, Craisins®, onion and sauce. Place a teaspoonful of trout mixture on top of bread round and top with salsa.

Chef’s tip: For a delicious glaze for fish, lamb or chicken, heat 1/2 cup Ocean Spray® Jellied Cranberry Sauce with 1/2 teaspoon ground cumin and 1 tablespoon sweet chilli sauce.
