Roasted Loin of Pork with Cranberry Cumberland Sauce

ingredients:

  • Zest of 1 orange
  • 500ml cold water
  • 1 tspn Dijon mustard
  • 4 tbspn Ocean SprayŽ Whole Berry Cranberry Sauce
  • Pinch white pepper
  • 1/4 tspn ground ginger
  • 1/2 cup port
 

Combine orange zest and cold water into a saucepan and slowly bring to the boil.

Strain and dry zest on paper and discard liquid.

In a saucepan over low heat add zest, mustard, Ocean SprayŽ Whole Berry Cranberry Sauce, pepper and ginger. Stir until smooth consistency, add port and simmer for another 5 minutes.

Refrigerate and serve when ready with roast pork loin or chicken.
