Sauté onion and ginger in heavy based pan with 10g of butter. Add the sweet potato with the water and stir gently. The idea is to have the potatoes soft by the time the water is gone.
When the potato is soft drain any liquid from the pan and puree with the remaining butter until smooth.
Stir through the Craisins® and season to taste.
Grill lamb chops to medium and serve with mash.
Lamb may be replaced with chicken fillets, pork, fish or steak
