Ham, Roasted Pepper & Cranberry Sandwich

INGREDIENTS

  • 1 red pepper
  • 2 foccacia OR bread rolls
  • 2 tablespoons seeded mustard
  • 2 tablespoons Ocean Spray® Whole Berry Cranberry Sauce
  • 8 slices leg ham
  • 4 asparagus spears, cooked (in season) OR canned
  • tasty cheese
  • iceberg lettuce

DIRECTIONS

Cut red pepper into 4-5 large slices and place, skin-side up, under grill until skin has blackened and shrivelled. Remove from grill and remove skin, then cut peppers into thin slices.

Spread 1 tablespoon of mustard on one side of each roll and 1 tablespoon of Cranberry Sauce on the opposite side. Layer remaining ingredients into rolls and serve.
