Witlof, Apple & Walnut Salad with Cranberry Vinaigrette
170 grams Ocean Spray® Craisins® dried cranberries
2 cups white wine vinegar
1-1/2 cups castor sugar
1 teaspoon sugar
1 teaspoon French mustard
100 ml olive oil
25 ml walnut oil (or olive oil)
1/4 cup cranberry vinegar
3 Witlof salad greens, leaves separated
1 Apple, peeled, cored and thinly sliced
1/2 cup walnuts, roughly chopped
Salt and pepper to taste
Soak Craisins® in vinegar overnight. Puree and strain into a cup.
Combine Craisins® mixture and sugar in a saucepan. Gently simmer until sugar has dissolved. Set aside to cool.
Combine cooled vinaigrette with additional ingredients in bowl and vigorously shake.
In a salad bowl, add Witlof, apple, walnuts, dress with cranberry vinaigrette and season with salt and pepper.
