Crab Cakes with Cajun Cranberry Sauce
Crab cake ingredients:
2 spring onions, chopped finely
2 tablespoons mayonnaise
1 small egg
1 tablespoon Dijon mustard
1 tablespoon Cajun Seasoning
200 grams cooked crabmeat
1/4 cup cornflake crumbs
Oil for frying
Cranberry Cajun dip ingredients:
275 grams Ocean Spray® Whole Berry Cranberry Sauce
1 tablespoon Cajun seasoning
1 tablespoon fresh thyme leaves
To make crab cakes combine all ingredients except oil and let mixture rest in refrigerator whilst making dip. Meanwhile make dip by combining all dip ingredients. Set aside.
Form small patties with chilled crab mix and fry until golden brown and cooked through. Warm dip in microwave for approx. 1 minute and serve immediately with warm crab cakes and sour cream.
